1/4 cup bread crumbs
1/4 cup parmesan cheese
4 green onions chopped
1/2 cup yellow peppers chopped
3 cups sweet corn kernels
1 cup sour cream
1/4 cup milk
3 eggs well beaten
salt and pepper to taste
pinch cayenne pepper
1 cup grated mozarella cheese
Tomato topping:
2 tbsp. butter
2 tbsp. basil
2 tbsp. parsley
1 clove garlic
3 large tomatoes
Mix crumbs and cheese and add 1 tbsp melted butter. Set aside. Sauté onions and peppers in remaining batter for 3 minutes. Add corn and simmer 3 more minutes. Mix sour cream, milk, eggs salt and peppers in bowl. Add cooled corn mixture. Turn into deep casserole and bake 30 minutes. Meanwhile - simmer tomato topping mixture until thick. When casserole has baked, pour tomato topping over corn mixture - sprinkle with mozzarella cheese. Sprinkle breadcrumb mixture over cheese and bake 15 - 20 minutes until golden brown.
