Baked Oysters from Limberis Seafood Processing Ltd.
24 North Cove Oysters
1 tsp dry mustard
1/3 cup olive oil
1/2 tsp curry powder
1/3 cup lemon juice
dash of Tabasco sauce
1/2 tsp salt
2 tbsp butter
freshly ground pepper
garlic to taste
1 cup soft white bread crumbs
Drain the oysters and pat dry. Mix the olive oil, lemon juice, and seasonings in a shallow dish, and place oysters in this marinade. Leave for 30 minutes, turning oysters once.
Melt the butter in a small pan and stir in the bread crumbs and sliced garlic. Cook until lightly coloured. Remove the oysters from the marinade and drain on paper towels.
Roll each oyster in the prepared crumbs and place in a single layer on a baking sheet. Brown in oven at 400 degrees for 20 minutes, or until lightly browned and crisp.
