How to cook fish

Size matters. Especially when cooking fish. It’s no fun cutting into your just-cooked fish and finding out it’s raw on the inside, or on the other hand, overcooked. To figure out cooking time, measure the fish at its thickest point. Then calculate 10 minutes for every inch (2.5 cm) of thickness. For example, roast a three-inch thick fish 30 minutes or grill a 2 1/2-inch fish 25 minutes (about 12 minutes per side). When the fish is close to being done, stick a toothpick into the thickest part of the fish (near the backbone). If the fish is no longer translucent and flakes easily, it’s done. And as for the last step. Well, that’s easy. Bow. Because you’ve earned it.
